Raveable Results.” ™ We are seeking a Catering Director/Director of Catering for the Dallas Convention Center in Dallas, Texas. The Dallas Convention Center has more than 1,500,000 square feet. And it offers a staggering 726,726 square feet of prime, contiguous exhibit space along with a 203,000-square-foot column-free exhibit hall, the largest in the U.S. Plus, the Dallas Convention Center offers even more great features, such as a 9,816-seat arena, a theater with a 1,750-person capacity and 96 meeting rooms. PRINCIPAL FUNCTION: This position is accountable for managing all aspects of the Catering Sales Department from origination to execution, including the delegation of responsibilities, working on a consistent basis with sales personnel to generate new business and maintain contact with present accounts, also responsible for handling customer complaints and rectifying problem situations. This is a highly visible and essential position representing Centerplate and our client the Dallas Convention Center. Position regularly interacts with Dallas Convention Visitors Bureau, contractors and meeting/event planners scheduling catered functions and concession services for all events. ESSENTIAL RESPONSIBILITIES: * Direct, train and work with catering sales staff to solicit, sell and book catering functions for clients visiting the Dallas Convention Center. * Communicate and work closely with Convention Visitors Bureau representatives as needed to gain advance information about new and returning client’s event plans. * Interact daily with Convention Center Sales department and Event Coordinators as needed with site visits, sales proposals and coordination of upcoming events. * Solicit new and existing accounts to meet/exceed revenue goals. * Recruit, direct, manage, train and counsel Catering Sales staff. * Actively participate in catering sales presentations, tastings, property tours and client meetings * Participate in daily/weekly business review, sales and management meetings * Professionally represent Centerplate and Dallas Convention Center in all meetings with clients, suppliers and Dallas Convention Visitors Bureau staff. * Represent Centerplate at hospitality industry meetings, social events and tradeshows as required by General Manager. * Assist General Manager and Chef in planning menus as requested, aid in the creation of specialty menus, themed functions and tastings. * Conform to all the regulations of the Dallas Health Department and Texas Alcoholic Beverage Commission * Establish and maintain accurate filing and posting systems for past, tentative and upcoming clients with event notes and history. * Disseminate information to all department heads distributing detailed function sheets/BEO’s for all events following Centerplate procedures and time lines. * Handle customer complaints regarding catered functions and take action as appropriate. * Prepare contracts to include all specified details concerning catered events * Perform other related duties, tasks and responsibilities as required by General Manager. QUALIFICATIONS/SKILLS: Required: * Outstanding communication, public relations and customer service skills * Strong organizational and leadership skills * College degree in restaurant/hotel field or equivalent experience. * Must be able to speak, read, write and understand the primary language(s) of the work location and the guests who typically visit the work location. * Minimum of 5 years experience in the catering sales field, with at least 2 experience years in a supervisory capacity. * Must possess a general knowledge of the food and beverage/hospitality industry understanding food costs, procedures, controls, and administration. OTHER REQUIREMENTS: Requires occasional lifting of up to 40 pounds in weight, 10 pounds frequently. Hours may be extended or irregular to include nights, weekends and holidays.
